Sous Vide (Kashering) Status: The container used for sous vide cooking can be kashered in the same manner as a pot. The immersion circulator cannot be kashered for Pesach but can be kashered for year-round use if it became non-kosher (or was purchased from someone who does not keep kosher). To kasher, clean it thoroughly, do not use it for 24 hours, and submerge it in boiling water. The topmost part of the immersion circulator (where the electronics and controls are) should not be put into the water, but all the lower parts – including the parts of the shaft which are above the “water line” – must be in the boiling water. After kashering, the device should be rinsed in cold water.
